Ingredients

  • 1 large zucchini
  • 1 medium eggplant
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 large red onion
  • 1 pint cherry tomatoes
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 3 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 medium lemon
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat a barbecue grill or grill pan over medium-high heat.

Step 2

Slice the zucchini and eggplant into 1/4-inch thick rounds. Seed and cut the bell peppers into wide strips. Slice the red onion into 1/4-inch thick rounds. Leave the cherry tomatoes whole.

Step 3

In a large mixing bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, dried basil, salt, and black pepper.

Step 4

Add the prepared zucchini, eggplant, bell peppers, red onion, and cherry tomatoes to the bowl. Toss the vegetables until they are evenly coated with the marinade.

Step 5

Let the vegetables sit in the marinade for about 10 minutes to absorb the flavors.

Step 6

Carefully place the vegetables on the preheated grill. Cook each side for 3-5 minutes or until grill marks appear and the vegetables are tender to your liking.

Step 7

Once cooked, transfer the grilled vegetables to a serving platter. Squeeze the juice of the lemon over the top.

Step 8

Garnish with freshly chopped parsley before serving.

Step 9

Serve warm or at room temperature. Enjoy your healthy Mediterranean Diet Grilled Vegetable Medley as a side dish or main course.
