  • 0.25 tsp black pepper
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved

Directions

Step 1

Begin by draining the tofu and pressing it to remove excess moisture. Place the tofu block between two paper towels and place a heavy object on top for about 15 minutes.

Once pressed, cut the tofu into 1-inch thick slices.

In a bowl, whisk together olive oil, lemon juice, oregano, thyme, rosemary, minced garlic, red pepper flakes, sea salt, and black pepper to create the herb marinade.

Place the tofu slices in a shallow dish or ziplock bag and pour the marinade over them, ensuring they are well coated. Marinate for at least 15 minutes, or up to 1 hour for more flavor.
