Ingredients

  • 14 oz extra-firm tofu
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • 1 red onion, cut into chunks
  • 2 bell peppers (any color), cut into chunks
  • 20 cherry tomatoes
  • 1 zucchini, cut into thick slices
  • 0 salt, to taste
  • 8 wooden or metal skewers

Directions

Step 1

Press the tofu by wrapping it in a clean kitchen towel and placing a heavy object on top for 15-20 minutes to remove excess moisture.

Step 2

In a small bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, paprika, and black pepper to create the marinade. Adjust salt to taste.

Step 3

Cut the pressed tofu into 1-inch cubes. Place tofu cubes in a shallow dish and pour the marinade over them. Gently toss to ensure tofu is well-coated. Allow to marinate for at least 15 minutes.

While the tofu is marinating, prepare the vegetables: cut the red onion and bell peppers into similar 1-inch pieces, and slice the zucchini into thick rounds.
