Ingredients

  • 4 pieces Salmon steaks
  • 3 tablespoons Extra virgin olive oil
  • 1 whole Lemon
  • 2 cloves Garlic
  • 2 tablespoons Fresh oregano
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 200 grams Cherry tomatoes
  • 100 grams Olives (Kalamata recommended)
  • 1 small Red onion

Directions

Step 1

Preheat your grill to medium-high heat, about 400°F (200°C).

Step 2

In a small bowl, combine the olive oil, zest and juice of the lemon, minced garlic, finely chopped oregano, parsley, salt, and black pepper.

Step 3

Place the salmon steaks on a tray and brush each side with the marinade. Let them sit for 10 minutes to absorb the flavors.

While the salmon marinates, prepare a Mediterranean salsa. Cut the cherry tomatoes into halves, slice the olives, and finely chop the red onion.
