Ingredients

  • 2 pounds Pork loin
  • 0.25 cup Extra virgin olive oil
  • 0.25 cup Lemon juice
  • 4 large Garlic cloves, minced

  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Red onion, sliced
  • 2 cups Cherry tomatoes
  • 0.25 cup Fresh parsley, chopped

Directions

Step 1

In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, rosemary, salt, and black pepper.

Place the pork loin in a large resealable plastic bag or shallow dish and pour the marinade over the top. Seal or cover and marinate in the refrigerator for at least 1 hour, preferably 4 hours or overnight for deeper flavors.
