Ingredients

  • 1 pound firm white fish (like cod, halibut, or mahi-mahi)
  • 1 large lemon
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh dill
  • 1 tablespoon fresh oregano
  • 3 cloves garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large red bell pepper
  • 1 medium zucchini
  • 8 pieces wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.

Step 2

Cut the fish into 1.5-inch cubes and set aside.

Step 3

Grate the zest from the lemon and squeeze the juice into a mixing bowl.

Step 4

Mince the garlic cloves and add them to the bowl along with the zest, lemon juice, olive oil, chopped parsley, dill, and oregano.

Step 5

Add salt and black pepper to the mixture and combine to form a marinade.

Step 6

Place the fish cubes in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for 20 minutes.

Step 7

While the fish is marinating, chop the red bell pepper into 1-inch pieces and slice the zucchini into thick rounds.

Step 8

Preheat the grill to medium heat.

Step 9

Thread the marinated fish, red bell pepper, and zucchini onto the soaked skewers, alternating between pieces of fish and vegetables.

Step 10

Lightly brush the grill grates with oil to prevent sticking.

Step 11

Grill the skewers for about 4-5 minutes on each side or until the fish is opaque and thoroughly cooked.

Step 12

Serve immediately with a side of lemon wedges, if desired.
