Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 8 whole-wheat slider buns
  • 1 cup baby spinach leaves
  • 1 cup cherry tomatoes, sliced
  • 1 cucumber, thinly sliced
  • 0.5 cup Greek yogurt
  • 1 tablespoon dill, chopped
  • 0.5 red onion, thinly sliced

Directions

Step 1

Begin by preparing the marinade. In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, ground black pepper, and salt.

Step 2

Slice the chicken breasts into thin, even pieces, about the size of your slider buns, and place them into a resealable plastic bag.

Step 3

Pour the marinade over the chicken, seal the bag, and massage gently to coat the chicken evenly. Let it marinate in the refrigerator for at least 30 minutes to 1 hour.

Step 4

While the chicken is marinating, prepare the cucumber yogurt sauce by mixing Greek yogurt, chopped dill, a pinch of salt, and sliced cucumber in a small bowl. Set aside in the refrigerator.

Step 5

Preheat your grill to medium-high heat.

Step 6

Once the grill is ready, remove the chicken from the marinade and grill each piece for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Step 7

Toast the whole-wheat slider buns on the grill for about 1-2 minutes until they are lightly golden.

Step 8

To assemble the sliders, spread a layer of cucumber yogurt sauce on the bottom half of each bun. Add a piece of grilled chicken, a few spinach leaves, sliced cherry tomatoes, and thin red onion slices.

Step 9

Top with the remaining half of the bun and serve immediately.
