Ingredients

  • 2 pieces boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 6 cups romaine lettuce
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 0.5 cup kalamata olives
  • 0.25 cup grated Parmesan cheese
  • 0.5 cup plain Greek yogurt
  • 1 teaspoon anchovy paste
  • 1 teaspoon Dijon mustard
  • 1 clove garlic
  • 2 tablespoons water

Directions

Step 1

In a small bowl, mix 2 tablespoons of olive oil, 2 tablespoons of lemon juice, dried oregano, salt, and black pepper.

Step 2

Place the chicken breasts in a shallow dish and pour the marinade over, coating each side. Let it sit for at least 15 minutes.

Step 3

Preheat the grill to medium-high heat. Grill the chicken breasts for 6-7 minutes on each side or until fully cooked. Once done, let them rest for 5 minutes before slicing.
