Ingredients

  • 2 fish (about 1 pound each) whole branzino
  • 2 whole lemon
  • 2 tablespoons olive oil
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 2 cloves garlic
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 sprigs fennel fronds

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Clean and pat dry the branzino. Score the skin of the branzino by making three shallow cuts on each side using a sharp knife. This helps the heat penetrate and the flavors infuse the fish.

Step 3

Slice one lemon into thin rounds. Reserve the second lemon for juicing after cooking.

Step 4

Peel and thinly slice the garlic cloves.

Step 5

Drizzle the inside of each fish with olive oil and season generously with half of the sea salt and black pepper.

Stuff the cavity of each fish with lemon slices, rosemary sprig, thyme sprigs, garlic slices, and fennel fronds.

Brush the outside of the fish lightly with olive oil and season with the remaining salt and pepper.
