Begin by preparing the artichokes. Cut off the top inch of each artichoke to remove the thorny tips.
Trim the stem, leaving about an inch attached to the base of the artichoke. You can peel and use the stems as they are edible.
Remove any smaller leaves towards the base and snip the tips of each leaf with kitchen scissors.
Fill a large pot with 8 cups of water. Add 1 teaspoon of salt, juice from one lemon, and 2 bay leaves.
