Ingredients

  • 4 large Artichokes
  • 2 whole Lemon
  • 0.25 cup Olive oil
  • 2 cloves Garlic
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 whole Bay leaves
  • 8 cups Water

Directions

Step 1

Begin by preparing the artichokes. Cut off the top inch of each artichoke to remove the thorny tips.

Step 2

Trim the stem, leaving about an inch attached to the base of the artichoke. You can peel and use the stems as they are edible.

Step 3

Remove any smaller leaves towards the base and snip the tips of each leaf with kitchen scissors.

Step 4

Fill a large pot with 8 cups of water. Add 1 teaspoon of salt, juice from one lemon, and 2 bay leaves.

Step 5

Bring the water to a boil. Add the artichokes to the pot, and reduce the heat to a simmer.

Step 6

Cover and cook for about 15 to 20 minutes until the artichokes are tender and you can easily pull an outer leaf.

Step 7

Meanwhile, prepare the dressing. Mince 2 cloves of garlic and chop 2 tablespoons of fresh parsley.

Step 8

In a small bowl, combine 0.25 cup of olive oil, juice from one lemon, minced garlic, chopped parsley, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper.

Step 9

Preheat your grill to medium-high heat.

Step 10

Once the artichokes are cooked, drain them, and let them cool slightly.

Step 11

Cut each artichoke in half lengthwise. Use a spoon to remove the fuzzy choke inside each half without disturbing the heart.

Step 12

Brush the cut sides of the artichokes generously with the prepared dressing.

Step 13

Place the artichokes cut-side down on the grill.

Step 14

Grill for about 5 to 10 minutes, turning as needed, until the leaves are nicely charred.

Step 15

Remove artichokes from the grill and drizzle any remaining dressing over them before serving.

Step 16

Serve the grilled artichokes warm as a delightful starter or side dish in line with a Mediterranean diet.
