Ingredients

  • 1 cup Greek yogurt
  • 2 tablespoons Extra virgin olive oil
  • 0.5 cup Fresh basil leaves
  • 0.5 cup Fresh parsley leaves
  • 0.25 cup Fresh dill
  • 0.25 cup Fresh chives
  • 1 large Garlic clove
  • 2 tablespoons Lemon juice
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Anchovy paste
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Water

Directions

Step 1

In a blender or food processor, combine Greek yogurt, extra virgin olive oil, fresh basil leaves, fresh parsley leaves, fresh dill, and fresh chives.

Step 2

Add the garlic clove, lemon juice, red wine vinegar, anchovy paste, salt, and black pepper to the blender.

Step 3

Blend all the ingredients on high speed until the mixture becomes smooth and creamy. If the dressing is too thick, add water, one tablespoon at a time, to achieve your desired consistency.

Step 4

Taste and adjust the seasoning with more salt or pepper if needed.

Step 5

Transfer the dressing into a jar or airtight container and refrigerate for at least an hour before serving to allow the flavors to meld.

Step 6

Serve as a dressing for salads, a dip for vegetables, or a sauce for grilled meats or roasted vegetables.
