Ingredients

  • 4 cups Mixed greens (spinach, arugula, romaine)
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.25 small Red onion
  • 0.5 cup Kalamata olives
  • 3 ounces Crumbled goat cheese
  • 0.25 cup Slivered almonds
  • 0.25 cup Extra virgin olive oil
  • 3 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Wash and dry the mixed greens thoroughly and place them in a large salad bowl.

Step 2

Halve the cherry tomatoes and add them to the salad bowl.

Step 3

Peel the cucumber, slice it in half lengthwise, scoop out the seeds, then slice it into half-moons. Add to the salad bowl.

Step 4

Thinly slice the red onion and add it to the bowl.
