Ingredients

  • 250 grams All-purpose flour
  • 150 grams Unsalted butter
  • 7 grams Dry yeast
  • 120 ml Lukewarm water
  • 1 teaspoon Salt
  • 2 tablespoons Sugar
  • 1 tablespoon Olive oil
  • 1 unit Egg
  • 3 tablespoons Honey
  • 50 grams Blanched almonds
  • 1 orange Zest of an orange

Directions

Step 1

In a bowl, dissolve the dry yeast in lukewarm water and let it sit for about 5 minutes until it becomes frothy.

Step 2

In a large mixing bowl, combine the flour, sugar, and salt.

Step 3

Add the yeast mixture and olive oil to the dry ingredients and mix until a dough forms.

Step 4

Knead the dough on a lightly floured surface for about 8-10 minutes until it becomes smooth and elastic.

Step 5

Cover the dough with plastic wrap and let it rise in a warm place for 1 hour or until doubled in size.

Step 6

Roll out the dough into a rectangle approximately 20x40 cm.

Step 7

Place cold, thinly sliced pieces of butter onto one half of the dough. Fold the other half over and seal the edges.

Roll the dough again to about 20x40 cm, then fold in thirds like a letter. Turn the dough 90 degrees and repeat this rolling and folding process two more times.

Cover the folded dough with plastic wrap and refrigerate for at least 1 hour.

Preheat the oven to 200°C (390°F).

Roll the dough into a large rectangle of about 30x60 cm. Use a sharp knife to cut the dough into triangles for croissants.

Gently roll each triangle from base to tip and curve them into crescent shapes. Place them on a baking sheet lined with parchment paper.

Beat the egg and lightly brush each croissant with it.

Bake in the preheated oven for 20-25 minutes until golden brown.

In a small saucepan, gently heat the honey until it's thin enough to spread. Add the orange zest, stirring well.

Step 16

Once the croissants are out of the oven, brush them with the warm honey glaze.

Step 17

Sprinkle with blanched almonds and let them cool slightly before serving.
