Rinse the spinach leaves thoroughly under cold water to remove any dirt or grit. Drain them well using a salad spinner or pat dry with a clean kitchen towel.
Peel and thinly slice the garlic cloves.
In a large non-stick skillet or wok, heat the extra virgin olive oil over medium heat until shimmering.
