Ingredients

  • 8 oz whole wheat spaghetti
  • 1 lb large shrimp, peeled and deveined

  • 2 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • 1 tsp lemon zest
  • 2 tbsp lemon juice, freshly squeezed
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 0.25 cup grated Parmesan cheese
  • 0.25 tsp crushed red pepper flakes

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the whole wheat spaghetti according to the package instructions until al dente. Drain and set aside.

While the pasta is cooking, heat the olive oil and butter in a large skillet over medium heat. Once the butter is melted, add the minced garlic and sauté for about 1 minute until fragrant.
