Ingredients

  • 12 ounces whole wheat fusilli pasta
  • 2 tablespoons extra virgin olive oil
  • 1 pound lean ground beef
  • 1 medium, diced yellow onion
  • 3 minced garlic cloves
  • 28 ounces canned crushed tomatoes
  • 0.5 cup dry red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups baby spinach
  • 0.5 cup, pitted and sliced kalamata olives
  • 0.5 cup, crumbled feta cheese

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to the package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until translucent.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it up with a wooden spoon as it cooks, about 8-10 minutes.
