Ingredients

  • 4 pieces Pork cutlets
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Lemon zest
  • 1 cup Whole grain breadcrumbs
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 2 tablespoons Grated Parmesan cheese
  • 2 large Eggs
  • 0.5 cup All-purpose flour
  • 4 tablespoons Extra-virgin olive oil

Directions

Step 1

Place the pork cutlets on a clean surface and pat dry with paper towels. Season them with salt, black pepper, and lemon zest on both sides.

Step 2

In a shallow dish, combine the breadcrumbs, oregano, thyme, and grated Parmesan cheese. Mix well to ensure even distribution of the herbs and cheese.

Step 3

In another shallow dish, beat the eggs until well mixed.

Step 4

Place the flour into a separate shallow dish.

Step 5

Coat each pork cutlet lightly in flour, shaking off any excess. Then dip into the beaten eggs, allowing any excess to drip off. Finally, press the cutlet into the breadcrumb mixture, ensuring an even coating on both sides.

Step 6

Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat.

Step 7

Carefully place two pork cutlets in the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through. Adjust the heat as necessary to avoid burning.

Step 8

Remove the cooked cutlets from the skillet and place on a paper towel-lined plate to drain any excess oil.

Step 9

Wipe the skillet clean and add the remaining 2 tablespoons of olive oil. Repeat the frying process with the remaining two cutlets.

Step 10

Serve the Mediterranean diet fried pork cutlets hot, garnished with a fresh lemon wedge and a sprinkle of parsley, if desired.
