Ingredients

  • 1 pound fresh asparagus
  • 1 cup cherry tomatoes

  • 0.5 cup kalamata olives
  • 0.5 cup feta cheese

  • 1 clove garlic

  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Start by trimming the tough ends off the asparagus spears. Cut the asparagus into 1-inch pieces.

Bring a pot of water to a boil and briefly blanch the asparagus by cooking it for 2-3 minutes until bright green and slightly tender. Immediately transfer the asparagus to a bowl of ice water to stop the cooking process, then drain well.
