Ingredients

  • 2 pieces Boneless skinless chicken breasts
  • 3 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 whole Lemon
  • 1 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Paprika
  • 1 medium Cucumber
  • 200 grams Cherry tomatoes
  • 0.5 medium Red onion
  • 100 grams Feta cheese
  • 50 grams Kalamata olives
  • 1 cup Brown rice
  • 2 cups Chicken broth
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a small bowl, combine 2 tablespoons olive oil, minced garlic, juice of half a lemon, oregano, cumin, paprika, salt, and pepper to create a marinade.

Place the chicken breasts in a shallow dish and pour the marinade over. Ensure the chicken is well coated. Let it marinate for 15 minutes.

While the chicken is marinating, rinse and cook the brown rice in chicken broth following package instructions until tender.
