Ingredients

  • 4 pieces skinless white fish fillets (such as cod or halibut)
  • 2 tablespoons extra virgin olive oil
  • 0.25 cup lemon juice
  • 2 tablespoons unsalted butter
  • 3 cloves garlic cloves, minced
  • 0.5 cup heavy cream
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Pat the fish fillets dry with paper towels. Season them with salt and black pepper on both sides.

Step 2

In a large non-stick skillet, heat 2 tablespoons of olive oil over medium-high heat.

Step 3

Add the fish fillets to the skillet and cook for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove the fish from the skillet and set aside on a plate.

Step 4

In the same skillet, reduce the heat to medium and add the butter. Once the butter has melted, add the minced garlic and sauté for about 1 minute until fragrant.

Step 5

Pour in the lemon juice and stir to combine, scraping any browned bits from the bottom of the skillet.

Step 6

Add the heavy cream and lemon zest to the skillet, stirring constantly. Let the sauce simmer gently for 2-3 minutes until slightly thickened.

Step 7

Season the sauce with additional salt and pepper to taste, if desired.

Step 8

Return the fish fillets to the skillet, spooning the sauce over the fish. Allow the fish to warm through in the sauce for about 2 minutes.

Step 9

Sprinkle the chopped fresh parsley over the fish and sauce before serving.

Step 10

Serve immediately with your choice of vegetables or a side salad for a complete Mediterranean meal.
