  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 pound cherry tomatoes, halved
  • 1 can (14 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • 0.25 cup fresh basil leaves, chopped
  • 0.25 cup black olives, sliced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup Parmesan cheese, grated
  • 2 tablespoons pine nuts, toasted

Directions

Step 1

Bring a large pot of salted water to a boil and cook the whole wheat fettuccine according to package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, heat olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 4

Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.

Step 5

Stir in the crushed tomatoes and bring the mixture to a simmer. Let it cook for 10 minutes, stirring occasionally.

Step 6

Add the dried oregano, chopped fresh basil leaves, and sliced black olives to the sauce. Stir to combine.

Step 7

Season the sauce with salt and black pepper. Adjust seasoning to taste.

Step 8

Toss the cooked fettuccine into the tomato sauce until it's fully covered.

Step 9

Serve the pasta in bowls, topping each portion with grated Parmesan cheese and a sprinkle of toasted pine nuts.

Step 10

Garnish with additional fresh basil leaves if desired and serve immediately.
