Ingredients

  • 1 4-5 lb whole duck
  • 3 tablespoons olive oil
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 medium lemon
  • 2 sprigs fresh rosemary
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Rinse the duck under cold water and pat it dry with paper towels. Remove any giblets from the cavity.

Step 3

Prick the skin of the duck all over with a sharp fork or tip of a knife, being careful not to pierce the meat.

Step 4

In a small bowl, combine the olive oil, sea salt, black pepper, dried oregano, dried thyme, and garlic powder.

Step 5

Rub the mixture all over the outer skin of the duck and inside the cavity.

Cut the lemon in half and place inside the duck's cavity along with the fresh rosemary sprigs.

Place the duck on a rack in a roasting pan, breast side up.
