Directions

Step 1

Peel the Russet potatoes and cut them into 1/4 inch thick sticks.

Step 2

Rinse the cut potatoes in cold water to remove excess starch and pat dry with a clean towel.

In a large, heavy-bottomed skillet or Dutch oven, heat the pork lard over medium heat until it reaches 350°F (175°C). Use a thermometer to monitor the temperature.
