Ingredients

  • 4 medium Yukon Gold potatoes
  • 3 tablespoons Olive oil

  • 0.5 cup Black olives
  • 1 large Lemon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley

Directions

Step 1

Wash and peel the Yukon Gold potatoes. Cut them into 1/2-inch cubes.

Step 2

Finely chop the red onion and red bell pepper. Mince the garlic cloves.

Step 3

Heat 2 tablespoons of olive oil in a large, non-stick skillet over medium heat.

Step 4

Add the potatoes to the skillet, spreading them out in a single layer. Let them cook for about 10 minutes, stirring occasionally until they start to become golden.

Add the remaining tablespoon of olive oil, chopped onion, and bell pepper to the skillet. Cook for an additional 8 minutes, stirring frequently until the onions are translucent.
