  • 1 teaspoon lemon zest
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 large eggs
  • 4 tablespoons extra virgin olive oil
  • 1 whole lemon wedges (for serving)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Cut the fish into bite-sized pieces, about 2.5 cm (1 inch) cubes. Pat the pieces dry with paper towels to remove excess moisture.
