Ingredients

  • 0.5 head Green cabbage
  • 0.5 head Red cabbage
  • 3 medium Carrots
  • 0.5 small Red onion
  • 1 cup Cherry tomatoes
  • 0.5 cup Parsley
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Lemon juice
  • 1 tablespoon Red wine vinegar
  • 1 clove Garlic
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by thinly slicing the green and red cabbage. Place the sliced cabbage into a large mixing bowl.

Step 2

Peel the carrots and use a julienne peeler to cut them into thin strips. Add the carrot strips to the bowl with the cabbage.

Step 3

Thinly slice the red onion and halve the cherry tomatoes. Add both to the mixing bowl with the cabbage and carrots.

Step 4

Chop the parsley finely and add it to the bowl, mixing all the vegetables together until evenly combined.

Step 5

In a small bowl or a jar with a tight-fitting lid, combine the extra virgin olive oil, lemon juice, red wine vinegar, minced garlic, Dijon mustard, salt, and black pepper.

Step 6

Whisk the dressing ingredients together thoroughly or shake the jar until all the components are well mixed and emulsified.

Step 7

Pour the dressing over the cabbage and carrot mixture, tossing gently using salad tongs to ensure all vegetables are coated evenly with the dressing.

Step 8

Let the salad sit for at least 10 minutes for the flavors to meld and for the cabbage to soften slightly.

Step 9

Serve the salad immediately as a side dish or a light main course. Enjoy the refreshing crunch and tangy Mediterranean flavors!
