Ingredients

  • 3 heads Endive
  • 15 pieces Cherry tomatoes
  • 0.5 pieces Cucumber
  • 0.25 pieces Red onion
  • 80 grams Crumbled feta cheese
  • 60 grams Chopped walnuts
  • 60 milliliters Olive oil
  • 30 milliliters Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Trim the bases of the 3 heads of endive and separate the leaves. Rinse thoroughly under cold water and pat them dry with a paper towel. Set aside on a serving platter.

Step 2

Halve the 15 cherry tomatoes and arrange them over the endive leaves.

Step 3

Peel and slice 0.5 cucumber thinly, and quarter the 0.25 of a red onion. Add both to the platter.

Sprinkle 80 grams of crumbled feta cheese and 60 grams of chopped walnuts over the salad.

To make the walnut vinaigrette, whisk together 60 milliliters of olive oil, 30 milliliters of red wine vinegar, 1 teaspoon of Dijon mustard, 1 teaspoon of honey, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper in a small bowl until emulsified.
