Ingredients

  • 1000 grams Pumpkin, peeled and cubed
  • 2 tablespoons Extra virgin olive oil
  • 2 units Garlic cloves, minced
  • 100 grams Greek yogurt
  • 1 teaspoon Fresh rosemary, chopped
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 1 teaspoon Lemon zest
  • 2 tablespoons Pumpkin seeds, toasted

Directions

Step 1

Bring a large pot of water to a boil and add a pinch of salt.

Step 2

Add the cubed pumpkin to the boiling water. Cook for 15-20 minutes or until the pumpkin is tender and easily pierced with a fork.

While the pumpkin is cooking, heat 1 tablespoon of extra virgin olive oil in a small pan over medium heat.
