Ingredients

  • 2 cups Whole wheat flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Sea salt
  • 0.5 cup Extra virgin olive oil
  • 0.25 cup Honey
  • 0.75 cup Low-fat Greek yogurt
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Grated lemon zest

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, baking powder, and sea salt until well combined.

Step 3

In another bowl, mix the olive oil, honey, Greek yogurt, vanilla extract, and lemon zest until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring gently with a wooden spoon until just combined. Be careful not to overmix the dough.

Step 5

Lightly flour a clean surface and turn the dough out onto it. Pat the dough into a circle about 3/4 inch thick.

Step 6

Use a floured biscuit cutter to cut out biscuits from the dough, placing each one onto the prepared baking sheet. Reform the dough scraps and continue cutting until all the dough is used.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the tops are golden brown.

Step 8

Remove the biscuits from the oven and let them cool on a wire rack before serving.
