  • 1 pound boneless, skinless chicken breasts
  • 3 tablespoons extra virgin olive oil
  • 1 medium red bell pepper
  • 1 medium zucchini
  • 1 small red onion
  • 10 cherry tomatoes
  • 3 cloves garlic
  • 1 teaspoon dried oregano
  • 1 medium lemon
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley
  • 0.25 cup olives (optional for garnish)

Directions

Step 1

Begin by preparing your ingredients: thinly slice the chicken breasts into strips; slice the red bell pepper and zucchini into thin strips; finely slice the red onion; halve the cherry tomatoes; mince the garlic cloves; and roughly chop the parsley.

Step 2

Heat 1 tablespoon of extra virgin olive oil in a large, non-stick skillet over medium-high heat.

Step 3

Add the chicken strips to the hot skillet, sprinkle with salt and black pepper, and sauté the chicken, stirring frequently, until browned and cooked through, about 6-8 minutes. Once cooked, remove the chicken from the skillet and set it aside.
