Ingredients

  • 2 tablespoons olive oil
  • 2 pounds beef chuck, cut into 1-inch cubes

  • 0.5 teaspoon black pepper
  • 1 large onion, chopped
  • 4 cloves garlic cloves, minced
  • 3 medium carrots, sliced
  • 2 stalks celery stalks, sliced
  • 1 medium red bell pepper, chopped
  • 14.5 ounces canned diced tomatoes
  • 2 cups beef broth
  • 1 cup dry red wine
  • 1 leaf bay leaf
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • 0.5 cup kalamata olives, pitted and halved
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large Dutch oven over medium-high heat. Season the beef cubes with salt and black pepper.

Step 2

Brown the beef cubes in batches, about 5 minutes per batch, to ensure even browning. Remove beef cubes from the pot and set aside.

Step 3

In the same pot, add the chopped onion and garlic. Saute for 3-4 minutes until the onion is translucent.

Stir in the carrots, celery, and red bell pepper, and cook for 5 minutes, allowing the vegetables to begin to soften.

About 15 minutes before the beef is done, stir in the olives.

Once cooked, remove the bay leaf, and check seasoning, adjusting salt and pepper to taste.

Serve the stew in bowls, garnished with freshly chopped parsley.
