Ingredients

  • 2 pieces Chicken breasts
  • 1 cup Whole wheat breadcrumbs
  • 0.25 cup Grated Parmesan cheese
  • 1 teaspoon Lemon zest
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 large Eggs
  • 0.5 cup All-purpose flour
  • 3 tablespoons Extra virgin olive oil
  • 1 whole Lemon wedges
  • 2 tablespoons Fresh parsley

Directions

Step 1

Place each chicken breast between two sheets of plastic wrap or parchment paper. Pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.

Step 2

In a shallow dish, combine the whole wheat breadcrumbs, grated Parmesan cheese, lemon zest, dried oregano, salt, and black pepper.

In another shallow dish, beat the eggs.

Place the flour in a third shallow dish.
