Ingredients

  • 2 cups unsweetened cranberry juice
  • 1 cup pomegranate juice
  • 2 tablespoons honey
  • 2 packets unflavored gelatin
  • 1 cup fresh raspberries
  • 1 tablespoon fresh mint leaves
  • 1 cup water

Directions

Step 1

In a medium saucepan, combine 1 cup of unsweetened cranberry juice and 1 cup of water. Sprinkle the unflavored gelatin over the surface and let it sit for 5 minutes to bloom.

Step 2

After the gelatin has bloomed, place the saucepan over medium heat and stir until the gelatin has completely dissolved, about 3 to 4 minutes. Make sure not to let the mixture boil.

Remove the saucepan from heat and stir in the remaining 1 cup of unsweetened cranberry juice, the pomegranate juice, and honey until fully combined.

Arrange half of the fresh raspberries evenly in the bottom of a loaf pan or a mold of your choice.

Pour the gelatin mixture evenly over the raspberries in the mold.

Once the raspberries are set in the liquid, scatter the remaining fresh raspberries on top and gently press them into the gelatin with a spoon.
