Crack the eggs into a bowl, season with salt and black pepper, and whisk until the yolks and whites are fully mixed.
Dice the onion and slice the cherry tomatoes in half.
Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
Add the diced onions to the pan and cook until they are translucent, about 2 minutes.
Add the spinach and cook until wilted, which should take about 2 minutes more.
Remove the spinach and onions from the skillet and set aside.
Wipe the skillet clean and add the remaining tablespoon of olive oil.
Pour in the beaten eggs and cook for 2 minutes or until the edges start to set.
Gently lift the edges of the omelette with a spatula and tilt the pan to let uncooked egg flow to the edges.
Once the omelette is mostly set, add the sautéed spinach, onions, sliced tomatoes, and crumbled feta cheese on one half of the omelette.
Gently fold the other half of the omelette over the fillings and let it cook for another minute to allow the cheese to melt.
Remove from heat and garnish with fresh basil.
