Ingredients

  • 4 large baking potatoes
  • 2 tablespoons extra virgin olive oil
  • 200 grams cherry tomatoes
  • 1 cucumber
  • 1 red bell pepper
  • 0.5 red onion
  • 80 grams kalamata olives, pitted
  • 100 grams feta cheese, crumbled
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Wash and dry the baking potatoes thoroughly. Use a fork to prick each potato several times.

Step 3

Rub each potato with 1 tablespoon of extra virgin olive oil and sprinkle with a little sea salt.

Step 4

Place the potatoes directly on the oven rack and bake for about 1 hour, or until the skins are crispy and the insides are tender.

While the potatoes are baking, prepare the Mediterranean topping.
