  • 12 cups water
  • 0.25 cup, chopped fresh parsley
  • 1 sliced lemon

Directions

Step 1

Rinse the whole chicken under cold water and pat it dry with paper towels.

In a large stockpot, heat the olive oil over medium heat.

Chop the onions, carrots, and celery into large pieces and sauté them in the olive oil until they are slightly softened, about 5 minutes.
