Ingredients

  • 2 slices Whole-grain bread
  • 1 medium Avocado
  • 1 teaspoon Lemon juice
  • 1 tablespoon Extra virgin olive oil
  • 2 large Eggs
  • 4 small Cherry tomatoes
  • 0.25 medium Cucumber
  • 4 leaves Fresh basil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes

Directions

Step 1

Toast the whole-grain bread slices until they are golden brown and crisp, about 3-4 minutes. Set aside.

Step 2

Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Add lemon juice, salt, and black pepper to taste. Mash with a fork until creamy and well combined.

Chop the cherry tomatoes into quarters and the cucumber into small cubes. Set aside.
