Ingredients

  • 3 large eggs

  • 0.25 teaspoon salt
  • 1 tablespoon parsley, fresh and chopped

Directions

Step 1

Crack the eggs into a mixing bowl, add the salt, black pepper, and oregano. Whisk the eggs until fully combined and slightly frothy.

Step 2

Heat the olive oil in a non-stick skillet over medium heat. Once the oil is hot, add the diced red bell pepper and chopped red onion. Sauté for about 2-3 minutes or until they start to soften.
