Ingredients

  • 3 cups Whole wheat flour
  • 1 cup Warm water
  • 2.25 teaspoons Active dry yeast
  • 4 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 1.5 cups Tomato sauce (low sodium)
  • 2 large Garlic cloves (minced)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 2 cups Spinach leaves
  • 1 cup Artichoke hearts (quartered)
  • 0.5 cup Kalamata olives (pitted and sliced)
  • 1 cup Cherry tomatoes (halved)
  • 0.5 cup Red onion (sliced)
  • 0.5 cup Feta cheese (crumbled)
  • 1.5 cups Shredded part-skim mozzarella cheese
  • 0.5 teaspoon Crushed red pepper flakes
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

In a large mixing bowl, combine warm water, yeast, and sugar. Stir and let it sit for about 5 minutes until frothy.

Step 2

Add in 2 tablespoons of olive oil, salt, and whole wheat flour gradually, mixing until a dough forms.

Step 3

Transfer the dough onto a lightly floured surface and knead for about 7-10 minutes until smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour, or until doubled in size.

Step 5

Preheat your oven to 425°F (220°C).

Step 6

Once the dough has risen, punch it down to release the air. Roll the dough out and press it into a deep dish pizza pan, ensuring the edges are covered to form a crust.

Step 7

In a bowl, combine the tomato sauce, minced garlic, oregano, and basil. Spread the sauce evenly over the pizza dough.

Step 8

Layer the spinach leaves, artichoke hearts, half the kalamata olives, cherry tomatoes, and red onion slices across the pizza.

Step 9

Sprinkle the feta cheese evenly over the vegetables, followed by the shredded mozzarella.

Step 10

Drizzle 2 tablespoons of olive oil over the top, and sprinkle with crushed red pepper flakes for a slight kick.

Step 11

Bake the pizza in the preheated oven for 35-40 minutes, or until the crust is golden brown and the cheese is bubbly and lightly browned.

Step 12

Remove the pizza from the oven and let it cool slightly. Garnish with fresh parsley before slicing into 8 pieces.

Step 13

Serve warm and enjoy your Mediterranean Diet Classic Deep Dish Pizza.
