Ingredients

  • 2 pieces whole-grain tortillas
  • 4 pieces large eggs
  • 2 tablespoons olive oil
  • 60 grams feta cheese, crumbled
  • 100 grams spinach, fresh
  • 150 grams cherry tomatoes, halved
  • 0.25 cups red onion, thinly sliced
  • 50 grams black olives, sliced
  • 2 tablespoons fresh basil, chopped
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper

Directions

Step 1

In a small bowl, whisk the eggs with salt and pepper until thoroughly mixed.

Step 2

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the spinach and sauté until wilted, about 2 minutes. Remove spinach from the skillet and set aside.

Step 3

Add another tablespoon of olive oil to the same skillet. Add the sliced onion and cook until softened, about 3 minutes.
