Ingredients

  • 4 pieces Skinless, boneless chicken breasts
  • 1 cup Whole wheat breadcrumbs
  • 0.25 cup Grated Parmesan cheese
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 Large egg
  • 2 tablespoons Water
  • 2 tablespoons Olive oil
  • 4 slices Lemon wedges

Directions

Step 1

Begin by flattening the chicken breasts. Place each chicken breast between two pieces of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound each breast to about 1/2 inch thickness.

Prepare the breading station. In a shallow dish, mix together the whole wheat breadcrumbs, grated Parmesan cheese, dried oregano, dried thyme, garlic powder, salt, and black pepper.

In another shallow bowl, beat the egg with 2 tablespoons of water to create an egg wash.
