  • 28 ounces canned diced tomatoes, with juices
  • 15 ounces canned chickpeas, rinsed and drained
  • 15 ounces canned kidney beans, rinsed and drained
  • 2 tablespoons tomato paste
  • 1 cup low-sodium beef broth
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 6

Return the beef to the pot and add the diced tomatoes, chickpeas, kidney beans, and tomato paste.

Step 7

Pour in the beef broth and sprinkle with cumin, paprika, oregano, cayenne pepper, salt, and black pepper.

Step 8

Stir to combine all ingredients and bring the mixture to a gentle boil.

Step 9

Reduce the heat to low, cover the pot, and let simmer for 30 minutes, stirring occasionally.

Step 10

Adjust seasoning with more salt and pepper if desired.

Step 11

Stir in the chopped parsley just before serving.

Step 12

Serve hot, garnish with additional parsley if desired.
