Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 0.5 tsp salt

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 0.25 cup red onion, thinly sliced
  • 1 tbsp chipotle in adobo, chopped
  • 1 can canned chickpeas, drained and rinsed
  • 0.5 cup feta cheese, crumbled
  • 0.5 cup pitted Kalamata olives, halved
  • 0.25 cup fresh parsley, chopped
  • 1 lemon, juiced
  • 0.5 tsp ground cumin
  • 0.5 tsp ground coriander
  • 0.25 tsp black pepper

Directions

Step 1

Rinse the brown rice under cold water until the water runs clear. In a medium saucepan, combine the rice, water, and salt, and bring to a boil over high heat.

Step 2

Once boiling, reduce the heat to low, cover, and let it simmer for about 30 minutes or until the rice is tender and all the water is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.
