Ingredients

  • 4 large eggs
  • 2 tablespoons olive oil
  • 0.5 cup red bell pepper, diced

  • 2 whole spring onions, sliced
  • 0.25 cup feta cheese, crumbled
  • 0.5 teaspoon red chili flakes
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a medium bowl, crack the eggs and whisk them until they are well beaten. Set aside.

Heat olive oil in a non-stick skillet over medium heat.
