Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 3 tablespoons extra virgin olive oil
  • 1 medium red bell pepper
  • 1 large zucchini
  • 1 medium red onion
  • 1 cup cherry tomatoes
  • 3 pieces garlic cloves
  • 0.333 cup kalamata olives
  • 0.25 cup fresh basil leaves
  • 2 tablespoons lemon juice
  • 1 teaspoon oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups baby spinach

Directions

Step 1

Slice the chicken breasts into thin strips. Season with salt, pepper, and oregano.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Add the chicken strips to the skillet and cook for 5-7 minutes, stirring occasionally, until golden and cooked through.
