  • 1 cup cucumber, diced
  • 1 cup tomato, diced
  • 0.5 cup red onion, thinly sliced
  • 0.5 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 4 pieces whole wheat roti

Directions

Step 1

In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, dried oregano, salt, and black pepper. Mix well to create a marinade.
