  • 1 cup Brown rice
  • 2 cups Chicken stock
  • 1 cup Cherry tomatoes, halved
  • 1 medium Cucumber, diced
  • 0.5 small Red onion, thinly sliced
  • 0.5 cup Kalamata olives, pitted and sliced
  • 0.5 cup Feta cheese, crumbled
  • 4 pieces Whole wheat tortillas
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by marinating the chicken: in a large bowl, combine 2 tablespoons of olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the chicken breasts, coat them well with the mixture, and let them marinate for at least 15 minutes.

Step 2

While the chicken is marinating, prepare the rice. In a medium saucepan, bring the chicken stock to a boil. Add the brown rice, cover, and reduce the heat to low. Cook for about 25 minutes, or until the rice is tender and the liquid has been absorbed. Fluff the rice with a fork and set aside.
