Ingredients

  • 500 grams ground chicken
  • 60 grams breadcrumbs
  • 60 milliliters milk
  • 1 large egg
  • 100 grams feta cheese, crumbled
  • 80 grams kalamata olives, pitted and chopped
  • 50 grams sun-dried tomatoes, chopped
  • 1 small red onion, finely chopped
  • 2 garlic cloves, minced
  • 15 grams fresh parsley, chopped
  • 5 grams fresh oregano, chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper or lightly oil a loaf pan.

Step 2

In a small bowl, combine the breadcrumbs and milk. Let them soak for about 5 minutes to soften.

In a large mixing bowl, combine the ground chicken, soaked breadcrumbs, egg, feta cheese, kalamata olives, sun-dried tomatoes, red onion, garlic, parsley, oregano, and lemon zest.
