Ingredients

  • 12 ounces fettuccine pasta (preferably whole wheat)

  • 3 cups baby spinach
  • 1 cup sundried tomatoes, chopped
  • 1 cup plain Greek yogurt
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh basil, chopped
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 0.5 cup chicken broth

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

While the pasta is cooking, season the chicken breasts with salt and pepper.
