Ingredients

  • 500 grams chicken feet
  • 2 tablespoons extra virgin olive oil
  • 1 whole lemon
  • 4 whole garlic cloves
  • 2 teaspoons fresh thyme
  • 2 teaspoons fresh oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 500 milliliters water
  • 1 cup chickpeas
  • 1 cup diced tomatoes
  • 1 cup baby spinach

Directions

Step 1

Begin by thoroughly cleaning the chicken feet. Use kitchen shears to clip off the nails if necessary. Soak them in water mixed with the juice of half a lemon for 5 minutes to remove impurities.

Step 2

In a large pot, bring 500 milliliters of water to a boil. Add the chicken feet and blanch them for 5 minutes. Drain and set aside.

Step 3

In a large pan, heat 2 tablespoons of extra virgin olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute.

Step 4

Add the chicken feet to the pan along with fresh thyme, fresh oregano, smoked paprika, sea salt, and black pepper. Stir to coat the feet in the seasonings evenly.

Step 5

Once the chicken feet are well-coated, squeeze the juice of the remaining half lemon over them and add the lemon peel to the pan.

Step 6

Pour in the diced tomatoes and chickpeas. Stir to combine and bring to a simmer.

Step 7

Cover the pan and allow the mixture to simmer gently for 60 minutes. Stir occasionally to prevent sticking, adding a bit of water if the mixture becomes too dry.

Step 8

Remove the lid and increase the heat slightly. Add the baby spinach and allow it to wilt, cooking for an additional 5 minutes until the sauce is thick and the feet are tender.

Step 9

Taste and adjust the seasoning if needed. Serve hot, garnishing with extra fresh herbs of choice if desired.
